inary identity stems from food carts. This is a town that celebrates new “pods,” or collections of carts, and is now looking to expand these vendors out of pods and into the streets. Portland’s carts serve everything from sushi made with Oregon Coast-caught fish to intricate moles, hotspots of culinary creativity packed into tiny metal kitchens on wheels.
