JAMESTOWN, N.C. (WGHP) — When friends and family visit this holiday season, serve them a special holiday brunch.
These are Cindy Farmer’s favorite holiday treat recipes
On this Recipe Wednesday, Shannon Smith shows us the perfect menu at Guilford Technical Community College's Culinary School in Jamestown.
Breakfast Casserole
Ingredients:
2 Eggs
2 lbs. shredded potatoes
1lb Bacon, Sausage or Ham, cooked
1 Onion, sauteed
1 Bell Pepper, sauteed
1 cup of shredded cheddar cheese
Directions:
Place potatoes on a greased sheet pan with butter, salt & pepper and bake until golden brown and let cool, then place in a greased casserole dish.
Layer bacon over the top of potatoes.
Then add Onions and Peppers
Scramble the eggs till firm, and let cool before adding them to the pan
Sprinkle cheese on top of the eggs
Cover and bake at 350 degrees for 30 minutes or an hour if it is frozen
My Wife’s Famous Cinnamon Cake
Ingredients:
2 cups all-purpose flour
2 cups granulated sugar
1 cup butter (softened)
2 tablespoons cinnamon
2 eggs
1 cup milk
2 teaspoons baking powder
1 teaspoon vanilla extract
Directions:
Prepare the topping:
In a bowl, mix 2 cups of sugar, 2 cups of flour, and 1 cup of softened butter until crumbly.
Remove 3/4 cup of this mixture and set it aside. This will be used as the topping.
Mix 2 tablespoons of cinnamon into the topping mixture.
Make the batter:
To the remaining sugar-flour-butter mixture, add 2 teaspoons of baking powder, 2 eggs, 1 cup of milk, and 1 teaspoon of vanilla extract.
Assemble the cake:
Preheat your oven to 350°F (175°C) and grease a baking dish.
Pour the batter into the prepared baking dish.
Sprinkle the cinnamon sugar topping evenly over the top.
Bake:
Bake in the preheated oven for **40 minutes**, or until a toothpick inserted in the center comes out clean.
Cool and serve:
Let the cake cool slightly before slicing and serving
Cranberry Pecan Goat Cheese Ball
Cranberry Pecan Goat Cheese Ball is a flavorful addition to your holiday spread. Packed with tangy goat cheese, sweet dried cranberries, pecans, and green onions, this cheese ball is sure to be a hit at any gathering!
It will take around 20 minutes to prepare, 3 hours to chill and can serve as many as 10 people/
Ingredients:
8 ounces of cream cheese at room temperature
8 ounces of goat cheese softened
1 cup dried cranberries chopped, divided use
1 cup pecan chips divided use
¼ cup sliced green onions divided use
½ teaspoon Worcestershire sauce
Directions:
In a large bowl, use an electric mixer to combine the cream cheese and goat cheese. Mix until well combined. Add half of the cranberries, half of the pecans, and half of the green onions, along with all of the Worcestershire sauce. Mix until well combined.
Place a large piece of plastic wrap on a flat surface. Spoon the mixture into the center of the plastic wrap. Bring up the edges of the plastic wrap to cover the cheese and form it into a ball. Refrigerate for at least 3 hours.
Before serving, place the remaining cranberries, pecans, and green onions in a shallow bowl. Unwrap the cheese ball and gently roll it in the mixture to cover.
Serve with crackers
Gingerbread Scones
Ingredients:
all-purpose flour 4 ½ cups
baking powder 2 ½ tbsp
salt ¾ tsp
ginger 1 ½ tsp
cinnamon 1 ¼ tsp
cloves 1 tsp
brown sugar ½ cup
butter ¾ cup
molasses ½ cup
heavy cream 1 ½ cup
egg 1 whole
optional ingredients 1 – 1 ½ cups
Directions:
Combine dry ingredients. Cut in butter. Toss in optional ingredients. Lightly beat the egg and add to heavy cream and molasses.
Add to dry and mix until a soft dough forms. Chill dough if it is too soft to make up. Roll dough out into a circle 1/2” thick. Cut into 12 wedges. Egg wash and place onto parchment paper and bake at 400 degrees for 15 minutes. Glaze when cool.
Variation: Egg wash and dip into course sugar before baking if not using flat glaze.*
Bread Pudding
Ingredients:
Scale: 1 – 2” half hotel pan
Bread – cut into approx. 1” cubes
8 eggs
1 qt heavy cream
8 oz sugar
As desired optional ingredients (choc chips, raisins, dried fruit, nuts, etc)
to taste cinnamon, nutmeg, or other spices
Directions:
Place bread pieces in a hotel pan until they reach the top of the pan.
In a mixing bowl large enough to accommodate the custard and the bread pieces, lightly beat eggs, add the remaining ingredients and whisk thoroughly.
Dump bread pieces into custard and stir well. Let the mixture rest for 20 minutes, stirring every 5 minutes or so.
Spray hotel pan. Pour in custard/bread mixture.
Bake at 350˚F for about 1 hour until set.
