DE PERE, Wis. (WFRV) - Many are talking about the resurgence of supper clubs and the traditional Wisconsin Old-Fashioned cocktail before you sit down for your meal. But the operator of the Union Hotel Supper Club, Makim Boyd, says the martini looks like it’s making a comeback. Extra Sides: Cattails Supper Club head chef and UW Professor talk the science of meat "As far as cocktails go, the Old-Fashioned is quite popular," Boyd told Local 5 News. "Martinis and Manhattans, particularly straight-up martinis, have made quite the comeback over the last two or three years." Boyd should know. He is the fourth-generation owner and operator of the supper club and hotel. He worked his way up, starting as a gopher, then dishwasher, then bartender, and ultimately front of the house. "When I started bartending, which was about 50 years ago, martinis and Manhattans were the drink. We actually sold very few Old-Fashioneds." Extra Sides: Some Irish dishes from Wexford Town There's a photo of Boyd as a 13-year-old behind the bar among the many historic and family photos that fill the Union Hotel Supper Club, the longest continuously operating supper club in the Green Bay area and part of the Packers Heritage Trail. "When I became a teenager, they said, 'We're going to put you behind the bar,' and it was martinis and Manhattans all afternoon long. Gin was the choice back then, although it’s primarily vodka now."
