A bowl of ramen with corn at Tokyo Tonkatsu in Eugene. | Brenna Houck Where to go for crunchy pan-fried chicken and doubles, fluffy egg-topped huaraches, bulgogi crisped in hot stone bowls, and more Just two hours south of Portland, Eugene is a college town at its core with a growing community making their home here year-round. The city’s 1960s counter-culture connections infuse the scene with a grassroots, DIY spirit that bleeds over into the food scene. Oregon produce, wine, and spirits are celebrated and casual, no-frills dining is very much de rigueur. In the past decade, food cart culture has firmly taken hold, meaning some of the best meals are now found parked outside of breweries or in the smattering of truck parks around the downtown core. Asian cuisines — particularly Chinese and Korean food — are well-represented as are bakeries transforming local grains into stellar pastries. Here are some of the very best of Eugene’s dining scene, from Korean comfort food dens to destinations for dim sum brunch with hand-made dumplings.
