Korean-Tex Cuisine with Chef James Canter Scheduled at SPS Dinner Club on 10/1       What:  After spending time immersed in the food and culture of South Korea, Chef James Canter of Guerrilla Gourmet is temporarily back in San Antonio — and SPS Dinner Club is putting him back in the kitchen .     On Thursday, October 1 at 7 p.m., SPS Dinner Club will welcome Chef Canter for a one-night-only, multi-course dinner at Cherrity Bar, featuring a menu inspired by his recent experiences in South Korea and his Texas roots. Canter describes the concept simply as “Korean-Tex” — a collision of Korean flavors, ingredients and culinary traditions with the bold Texas influences that have long characterized his cooking.       “Cultural food and its traditions are a doorway into beginning to understand a culture’s people — all we have to do is walk through it with an open mind and an open heart,” says Chef Canter.     “James is one of those chefs who is constantly learning, traveling and evolving, and you can taste those experiences in his food.” says Kimberly Suta, founder of SPS Dinner Club. “Having him back in San Antonio after spending so much time in South Korea gives us a really unique opportunity to experience some of what he’s discovered there, but through James’ very distinctive culinary lens. Truth be told, he’s one of my favorite chefs of all time!”       Canter has built a following in San Antonio through Guerrilla Gourmet and his globally influenced approach to food. His career has taken him through professional kitchens and culinary projects around the world, including extensive time in South Korea, where he has worked alongside local chefs and studied Korean techniques, fermentation, butchery and regional cuisine.     San Antonio food fans may also recognize Canter from Food Network’s Guy’s Grocery Games, where he competed in an “ultimate beef battle” featuring challenges that began with creating a burger before moving through additional rounds of competition in Guy Fieri’s Flavortown Market.       The full menu will be announced soon.       BEVERAGES Both alcoholic and nonalcoholic beverages will be available for purchase from Cherrity Bar throughout the evening.
