This year, the official National Watermelon Day is Monday, Aug. 3. The hotel’s talented mixologists have created three handcrafted sophisticated cocktails to commemorate National Watermelon Day. These are: the Watermelon Tamarind Chill Poptail, the Pink Hugo Spritz and the Valencia Rose. Each cocktail is available for $14 from 5 p.m. to midnight, Friday through Sunday.     he Watermelon Tamarind Chill Poptail is made with tequila, triple sec and fresh, housemade margarita mix. It’s topped with a watermelon tamarindo popsicle and garnished with a tajin rim. This cocktail is shaken and served in a rocks glass.     The Pink Hugo Spritz is made with watermelon juice, lime juice, St. Germaine, club soda and muddled mint. It’s served poured over ice in a wine glass, topped with prosecco and garnished with a mint bouquet.       The Valencia Rose is made with Waterloo prickly pear and rose gin, watermelon juice, St. Germaine and lemon juice.
