After taking a temporary break, one of San Antonio’s best spots for birria tacos says it won’t be returning to Ingram Park Mall. A rep for Guerito’s Tacos says business at the food court kiosk wasn’t as busy as the restaurant expected.Via direct message, a rep said business at the mall was a bout a quarter of what the mall projected. Although it tried sales, employee discounts, influencer campaigns, and other promotions, sales never picked up.The restaurant has been around in some form since 2020, when its owners debuted food truck Guerito’s Red Tacos. It quickly gained a following for its Tijuana-style beef mulitas, quesadillas, and quesitacos dipped in a signature consommé rich with adobo, garlic, and cumin.In June 2023, it launched its first brick-and-mortar, simplifying the name but building up its repertoire to include fusion dishes like pizza and ramen. The aguas frescas selection grew, too, expanding past its original lineup of pineapple, cucumber, and watermelon to flavors like horchata, jamaica, and strawberry.Guerito’s followed up with an Ingram Park Mall location in August 2025. The spot had a slightly edited menu for on-the-go shoppers. In February, the business decided not to renew the lease for the Potranco Road space, citing a rent dispute.The Ingram Park Mall space was the last physical location of the taqueria, but Guerito’s isn’t gone for good.
