After suffering a string of bar closures in late 2025, San Antonio’s St. Paul Square is once again taking flight. Condor, a new wine bar from the same ownership team as buzzy newcomer Miles, is now open at 1164 E Commerce St. Condor is the third wine bar to open in the St. Paul’s Square space. P rolific San Antonio bar owner Steve Mahoney first renovated the space as Anne’s after he moved Francis Bogside from Southtown to the East Side in summer 2023. When the children of his late business partner, Robert Darilek, took over the business later in the year, they redubbed the space Vino Veritas. Although all focused on grapes, Condor is a far cry from its predecessors. In place of the former’s all-over florals, the new wine bar opts for Marfa-chic, covering the walls in plastered sage green hung with abstract paintings.The actual offerings diverge paths, too. Condor mostly serves low-intervention wines such as skin-contact oranges and pet nats, offering a curated food menu with bites like sourdough bread service, a barbacoa melt, and heirloom popcorn.Condor follows the May debut of Miles in the adjoining old Francis Bogside space. Both are the work of Tatanka Guerrero’s Dreamers Doers hospitality group, the force behind El Tigre Coffee Roasters, Al Campo in Marfa, and Trona in Austin.Although relatively uncommon before the COVID-19 pandemic, wine bars have become one of San Antonio’s fastest-growing categories. In recent years, several promising new spots like Bar Bamboosh and Copper Rose Wine have debuted while grape-centric chains like Sixty Vines increasingly eye Alamo City.Meanwhile, Condor continues to add to the buzz developing at ST.
