Servings: 1 tart Author: Em Tomeo, development coordinator, Urban Roots in Reno Ingredients¾ cup powdered sugar1 teaspoon vanilla extract divided¼ teaspoon salt¾ cup coconut oil divided2¾ cups all-purpose flour gluten-free or whole-wheat flour also works, divided¼ cup water¾ cup soy milk full-fat oat milk, or regular milk½ cup granulated sugar¼ cup oats¼ cup cane brown, or granulated white sugar3 to 4 plums InstructionsFor crustPreheat oven to 350 degrees F. Mix together ¾ cup powdered sugar, ½ teaspoon vanilla extract, ¼ teaspoon salt, and ½ cup coconut oil. Add in 2½ cups flour along with ¼ cup water as needed.Fold and mix dough as you add in dry ingredients until you get a Play-Doh texture. Transfer dough to a flat surface and roll out until about ¼-inch thick.Transfer rolled dough to an 8-inch tart pan. Place pan in preheated oven and bake for 30 minutes.For pastry creamWhile crust is baking, add ¾ cup milk or cream of choice and ½ teaspoon vanilla extract to a saucepan (add liquid first to avoid burning). Add in ¼ cup sugar and whisk over heat until dissolved. Sift in ¼ cup flour to avoid clumping. Whisk over heat to incorporate flour. It should form a pastry-cream consistency within 5 to 10 minutes. Remove from heat and let cool.For crumbleMix together ¼ cup oats, ¼ cup sugar (choose your preference), and ¼ cup coconut oil in a small bowl. Set aside to use in topping.To finish tartWhen the crust has baked for 30 minutes, remove it from the oven, and let it cool for a few minutes. Keep the oven on. Add a layer of pastry cream and smooth it out.Cut plums into slices, removing the pits, and place these atop the pastry cream. Save a few for decoration. Coat the plums in the crumble mixture. Then top with reserved plums as decoration. Place the pan back in the oven at 350 degrees F for 15 minutes.Serve warm with fresh mint, whipped cream, or vanilla ice cream.
