By Chris Diebel Spring blossoms are popping out around town, which means it’s time to switch up the wines in our glasses. With that in mind, I recently visited Carly Dascoli (pictured), the wine director at Oak Park, to ask what she’s drinking this time of year. “In the spring, I’m looking f or wines that are fresh, herbaceous and light,” she said. “We’re not drinking red wine by a fire anymore. We are eating lighter, and the wine should complement that.” When she takes a break from curating the restaurant’s 4,000-bottle inventory, she’s likely drinking one of the following wines from local wine shops. Campo Viejo Cava NV ($12-14): Crisp, delicious and affordable. Medium-bodied and dry with apple and citrus notes. “It’s aged for at least 18 months,” Carly said, “so it will taste closer to a traditional Champagne than competitors in its price point.” It pairs well with passed hors d’oeuvres or a salad course. Also, consider it for brunch where it will enhance the hollandaise sauce in an eggs benedict. Available at Gateway Market. Teutonic “Crow Valley” 2023 Gewurztraminer ($25-28): This medium-bodied wine from the Willamette Valley in Oregon is off-dry with floral notes of Asian pear and lemon grass. Carly says it will make your spring vegetables sing. “It would also be lovely with a light fish or scallops topped with lemon and herb sauces,” she said. If you enjoy a Riesling, this is a fun alternative. Available at The Cave. Regnie “Grain Granit” 2023 Gamay ($37-40): A light-bodied red wine that is fruit-forward with notes of cherry and earthy minerals. It’s ideal for ham and chicken dishes, but finding it in stores can be tricky. “Don’t hesitate to reach for your favorite Pinot Noir if you strike out,” Carly said. Available at The Cheese Shop. Guigal 2010 Chateauneuf Du Pape ($58-60): If lamb is on the menu, she recommends this classic blend of Grenache, Syrah, Mourvèdre grapes. “The savory notes of Syrah play particularly well with game meat.” Available at Wall To Wall Wine and Spirits.
