As 2026 gets into full swing, a new crop of restaurant openings is coming to town just in time for spring. But this wave of openings feels oddly familiar — some of these newcomers are actually evolutions from pop-ups, previo
us locations, food carts, and sister restaurants. Yet many of them are bringing something completely fresh to Portland, like Korean salt bread or a noodle soup shop focusing on boat noodles. Here’s what we have to look forward to in the sunnier months ahead.
Ponto
The folks behind the now-closed Instagram-only custom cake bakery My Favorite Cake are opening a bakery called Ponto in Northeast Portland. Ponto specializes in Korean salt bread, and fresh batches will come out at 9 a.m. and 11 a.m. each day. The rotating selection of flavors includes original, glazed, chocolate, red bean and butter, strawberry milk, basil pesto, sausage, squid ink cheddar, olive, and black pepper. Slices of cake are also on offer, as well as coffee drinks made with Stumptown beans, including drip coffee and cream-top cold brew, as well as matcha lattes and strawberry milk.

Lansdowne Social
After an almost-year-long stint along NE 28th Avenue’s restaurant row, this communal supper club from chef-owner Martin Pfeifer and maitre d’ Owen Perry, both formerly of Quaintrelle, is moving across the river to Slabtown. When it originally opened back in 2025, it served five-course meals for $75 per person, plus beverage pairings for an extra $45 — all served at a communal table. Though the original location also hosted afternoon tea, that’s now held at their sister restaurant Doja Tea Room in Northeast Portland.

Steely’s
Burger and sandwich pop-up Little Brother will open a restaurant this spring called Steely’s, located in the former Gigantic Brewing on SE Hawthorne. It’s a joint venture with Smitty’s Taphouse in Sellwood, which will close as focus shifts toward Steely’s, per KGW. Past Little Brother menus have included classic smash burgers, meatloaf sandwiches, fried bologna sandwiches, and salads. The current estimated opening date is late March or early April.

Pipsqueak Bagels
Since its launch in May 2024, this pop-up has gained fame around Portland for being one of the best bagel makers in town, selling hand-rolled, boiled, and baked bagels at Puff Coffee and the Milwaukie Farmers Market. At some point this spring, founder Madilyn Gibbons will open Pipsqueak’s first brick-and-mortar on SE Gladstone Street in the space formerly occupied by Vtopian Cheese Shop. The bagel spot is already staffing up.

Sure Shot Burger
In the five years since its debut, Sure Shot Burger has established itself as one of the best no-nonsense smash burgers in the area. For the past few years, the cart has called the patio of Oakshire Beer Hall in Northeast Portland home, and soon Sure Shot will open a restaurant just steps away in the former Taqueria Los Pepitos Locos space. The new spot will involve a few more menu offerings, including milkshakes, slushies, crispy Brussels sprouts, and salads, as well as cocktails, root beer on draft, longer hours, and vintage Formica countertop vibes. Sure Shot is targeting a May opening.

Guay Tiew

The owners of popular pork-and-rice and noodle soup spot Khao Moo Dang — as well as other hit Thai spots around town including Thai Peacock and Rukdiew Cafe — are opening a new restaurant called Guay Tiew on NW 10th Avenue in the Pearl District. Owner Chookiat Saenguraiporn has been quiet about details of the spot, which was first reported on back in 2024, and did not respond to requests for comment, but the restaurant’s website promises “Thai street noodle soup. Bold broth. Made your way,” with lots of photos of boat noodles, so we suspect that’ll be a main focus of the menu; a new Instagram post also shows egg rolls and several stir-fried dishes. No opening date has been announced yet.
