Kaeda’s omakase menus start at $85. | Katherine Chew Hamilton/Eater Portland Omakase sushi for under $100 is nearly unheard of in Portland. Enter Kaede, where the tasting menu starts at $85 a head. Kaede, opened by married couple Shinji and Izumi Uehara in the quiet Sellwood neighborhood i n 2023, is a sushi kappo restaurant, serving a mix of sushi and cooked dishes — a little buttoned-up, but less formal than a kaiseki restaurant. Shinji stands behind the sushi counter, while Izumi is the server and the head of the kitchen.  On a recent visit, dinner opened with chilled red snapper nanban in tangy soymilk vinaigrette and a warm okonomiyaki-inspired croquette. Nigiri comes out five pieces at a time, starring fish from Tokyo’s markets with varieties not often seen in town, like wavy back skipjack or threeline grunt. Each piece of nigiri comes alive with garnish — a dab of yuzu jam, a sliver of shiso leaf. At the end, diners are presented with an a la carte menu for additional sushi. What to order Let Izumi guide your sake selection — the rotating list is curated yet diverse, with options ranging from earthy and umami to crisp and fruity. It’s well worth the small upcharges for supplements and additional small plates, like adding a hefty portion of Dungeness crab ($4) to your miso soup, or adding dishes like chilled eggplant ($6). The chawanmushi add-on for $8 is a must; it’s loaded with seasonal mushrooms, shrimp, and scallop in light yet deeply flavored dashi. Take note Kaede is a tasting-menu-only restaurant with a strict limit of two people per party and requires reservations.
