"We put out menus four times a year," says Chef Brown, "and we focus on the hunter, the gatherer, the fisherman, and the farmer." One of Chef Ashley's standout dishes this spring is the steak. "I grew up in Nebraska, so I know good beef," she says. "The ribeye comes with sautéed Swiss chard, pickled chard stems, crispy spiral potatoes, and a fried egg—a fresh take on the classic steak and eggs." Behind every dish is a dedicated team working together to create a menu that reflects both creativity and seasonal flavors. "Some ideas come from the staff—they want to play around with new flavors and ingredients," she explains. With their input, Chef Brown carefully crafts each menu. This spring's menu features delicious offerings like a tomato-strawberry salad with burrata, baby arugula, shallots, and a white balsamic vinaigrette. Also on the menu is a roasted cauliflower and leek bisque, featuring lion's mane mushrooms, sage, and garlic crunch brown butter.
