Spring refresh: Try these new snacks and recipes for the trails

(COLORADO SPRINGS)—Spring is here, which means it's time to refresh! But don't stop with your home or your wardrobe; get in your pantry and whip up some new spring snacks. Chef Janon Bourgeois, a local chef and culinary instructor, joined FOX21 Morning News on Wednesday, March 26, with some ideas
perfect for the trails or some early camping.
Her recipes for boiled peanuts, elote muffins, and trail mix cookies are below.
Boiled Peanuts
4 quarts water* 1/2 cup Salt
2 lbs RAW Peanuts
Add all ingredients to a large pot (make sure water covers the peanuts) and bring to a boil
Cover and reduce to a simmer
Cook for 6-8 hours, until tender, checking the water level every hour to make sure the peanuts are submerged
Elote Muffins
1 1/2 cups (190 g) All-Purpose Flour
1 1/2 cups (240 g) Cornmeal
1 Tbsp Baking Powder
1 Tbsp Sugar
2 tsp Salt
2 Eggs
1 can Creamed Corn
2 oz 1/4 cup canned Green Chilies, roasted & diced
1/4 cup Mayo
1/4 cup Parmesan Cheese, grated
1/2 cup PepperJack Cheese, shredded
1 tsp Chili Powder
1/2 tsp Garlic Powder
Tajin Spiced Corn Nuts to garnish
Preheat oven to 355 degrees F.
Line a muffin pan and lightly spray with oil
In a large bowl, combine flour, cornmeal, baking powder, sugar, and salt
In a separate bowl, combine remaining ingredients (except garnish) then gently fold into the dry ingredients. Do not overmix.
Scoop into liners and sprinkle with corn nuts.
Bake for 18-20 minutes until golden brown.
Trail Mix Cookies (makes 2 dozen)
3 cups (375 g) All-Purpose Flour
2 tsp Baking Powder
1 cup Salted Butter, softened
1 cup (100 g) Sugar
1 Egg
1 Tbsp quality Vanilla Extract
1/4 tsp Salt
1 cup (100 g) Plain Oatmeal
1/2 cup raw Almonds
1/2 cup raw Walnuts
1/2 cup yogurt-covered raisins
1/4 cup dried Cranberries
2 Tbsp raw Pumpkin Seeds
Preheat oven to 405 degrees F.
In a large bowl, sift together the flour and baking powder. Set aside.
With an electric mixer in a separate bowl, beat together butter and sugar until fluffy (about 3 minutes). Add eggs, vanilla, and salt and beat until combined.
Slowly add the flour mixture until a dough forms. Portion into 24 equal-sized balls.
In a small bowl, combine oatmeal, almonds, walnuts, raisins, cranberries, and pumpkin seeds (reserving a few almonds, walnuts, and raisins for the top).
Press the dough balls into the oatmeal mixture and place on a lightly greased, parchment-lined baking sheet.
Top with additional almonds, walnuts, and raisins.
Bake for 8-12 minutes until the cookies are golden brown around the edges.
