Chef Tayda offers simple onepan meal recipe to keep up with new year’s resolution

RICHMOND, Va. (WRIC) -- Is your New Year's resolution to keep up with your fitness goals and eat healthy? Chef Tayda, also known as Cooking with Tayda, came to the studio on Thursday to show a simple, healthy one-pan meal recipe.
Local chefs Shante Fields and Latisha Mason came to the 8News studio on Thursday, Jan. 24, to show an easy, healthy one-pan meal you can cook at home.
The meal consists of pan-seared salmon with broccoli, paired with a packet of quick, microwavable rice.
Fields explained what goes into a perfectly pan-seared cut of salmon, including how to keep it from sticking and what she typically uses to season it.
Before cooking, Fields said to begin by coating the pan with extra virgin olive oil. Then, she explained how long to cook your salmon.
"You want to cook your salmon for at least four minutes on the flesh side, and then turn it onto the skin side to cook for the rest of the way," Fields said. "It depends what temperature you like to cook your salmon for how long you cook it further."
Fields said she prefers to cook on medium heat, so the salmon stays on its skin side for about three minutes. During or afterward, you can throw your broccoli in the pan to warm up.
As for what she uses to season the salmon, Fields said she typically uses a blend that she made herself.
"I actually mix my own blend, so for your broccoli, I have pepper, garlic and a butter seasoning," Fields said. "We have some dry rub for the salmon, which is your basic seasoning that you probably have at home: salt, pepper, garlic, onion powder, parsley and cayenne."
As for why she began her business, Cooking with Tayda LLC, Fields said she always had a love of cooking, from watching cooking shows as a kid to amping up her skills during the COVID-19 pandemic.
In addition to selling products online like sauces, Fields' business offers an array of services, including prepared meals to reheat, event catering and cooking classes.
Fields said she will soon be releasing a knife set and a hat line on her online store.
