PHOTOS: Roots Natural Kitchen opens in Midlothian

CHESTERFIELD COUNTY, Va. (WRIC) -- A new Roots Natural Kitchen location had its grand opening in Midlothian on Saturday, aiming to increase people's accessibility to healthier food options.
The new location had its grand opening on Saturday, Jan. 11 from 11 a.m. to 9 p.m.at 14207 Winterview Parkway in Chesterfield's Midlothian area. The first 100 people that showed up got a free t-shirt and everyone received a 40% discount on their order all day.
Roots Natural Kitchen has two other locations in Virginia, one in Richmond's West End and one in Charlottesville, as well as several other spots along the east coast.
The Roots mission is to provide people with natural, healthy food while also maintaining a fast-casual setting. 8News got to speak with Henry Borgeson -- the CEO of Roots Natural Kitchen in Charlottesville -- about what prompted the business to come to the Richmond area.
"What we found actually during COVID impacted all restaurants, of course, but the students went home. But still, the city of Richmond loved that VCU restaurant," Borgeson said. "And we said, 'hey, maybe we don't just have to do university restaurants.' Let's bring restaurants that are convenient for the other folks in the city that have been ordering us for a delivery or coming downtown to see us."
