BATON ROUGE, La. (BRPROUD) — Casey Evans, the owner of Dearman’s Diner, is gearing up to launch a food truck extension of the beloved local eatery. Targeting a late-February debut, the food truck will bring the iconic flavors of Dearman’s to new audiences, with a late-night schedule and special event service in the works. While February is the tentative launch month, Evans notes that timelines can be flexible. “That is the plan. You never know, though, could be sooner, could be later,” he said. Once operational, the food truck plans to serve customers from 7 p.m. to 2 a.m. Thursday through Saturday. Fans of Dearman’s Diner can expect a blend of classic offerings and new creations. “To start, we’ll be featuring some menu items from the flagship Dearman’s Diner and move into food truck-exclusive items,” Evans said. Managing both the restaurant and food truck will rely on a strong team dynamic. Evans credits his general manager, Justin Burnett, and business entrepreneur Westin Williams for stepping up to share the operational load. "The three of us will be sharing the operational load. See when, where The idea for a food truck stemmed from a suggestion before evolving into a full-scale project. “It’s a situation that was built on the culmination of carrying the torch of a quality brand that’s one of the oldest in Baton Rouge and the relationships we’ve forged along the way,” Evans said. He sees the food truck as an opportunity to honor Dearman’s legacy while expanding its reach. "Justin, Wes and myself are going to put a lot into this to make the flagship location proud, put the product in front of new faces and service areas and time frames that we don’t currently," he said. Evans said the food truck's quick growth shows the team's people-first philosophy. “You can do that when you’re people-focused first,” he said, adding that the venture aims to make the flagship location proud while connecting with new customers.
