Lunch and après destination The Vintage Room is opening its fourth season at The St. Regis Deer Valley.  This ski season, The Vintage Room has debuted red leather seating areas, a new bar and a new sushi bar, according to the restaurant. Behind a 30-foot wooden bar, St. Regis mixologists create signature cocktails, and chefs prepare raw bar orders. The Sushi Bar features hand rolls made from seafood flown in daily from Maine, Nantucket and Hawaii. DJs spin Thursday-Sunday afternoons from a suspended booth.  Guests can enjoy champagne service, cocktails, beer and non-alcoholic beverages in The Vintage Room or on its outdoor deck and fire pit. The menu features servuga, imperial osetra and hybrid kaluga caviars with all the accoutrements, the restaurant said. Sushi hand rolls include king crab with garlic crisp, cucumber, avocado and rruffle dressing; and seared wagyu beef tataki with daikon sprouts, avocado, ponzu, garlic and truffle mayo. Chef Rolls include the vintage roll made with salmon, king crab, spicy tuba, cucumber, truffle, lemon and togarashi; and the Mountaineer Roll with spicy tuba, avocado, lemon and chili glaze. Nigiri include hamachi with yuzu, scallions and caviar; and salmon with tamari, lemon and scallion.  Champagnes are available by the bottle and half bottle, featuring Dom Pérignon, Louis Roederer “Cristal,” Veuve Clicquot and Armand de Brignac.St. Regis signature cocktails include the 1942 Margarita made with Don Julio 1942, Grand Mariner, lime and agave; the Kentucky Mule made with Bulleit Bourbon, lime and Fever Tree ginger beer; and the popular 7452 Bloody Mary, named for the elevation of the Resort, made with Belvedere Vodka and wasabi espuma, according to the restaurant. The extensive beer menu includes popular St. Regis Signature Beers including Cousin Jack and Main Street Mexican Lager. Seating at The Vintage Room, open daily from noon to 7 p.m., is available on a first-come, first-served basis, with the exception of the VIP area, reservations for which can be made and which can seat up to 10 people.  The post Vintage Room opens fourth season at St. Regis Deer Valley with new seating, bar and sushi bar appeared first on Park Record.
