From seed to growth: Boujee Bagels Coffee Company expanding roots to Austin

What began as a seed is continuing to grow and reach into Austin.
Boujee Bagels & Coffee Company, first established in Blooming Prairie in the spring of 2024, is now opening in Austin with an aim to begin serving in mid-February.
“We felt like there was a big calling and a big audience in Austin,” owner Trisha Tietje said. “We felt like we would like a second location and this would be a great place to start that.”
Boujee will be located at 1906 Eighth Street NW, in what was formerly Sip N Chew.
“Our turnkey entry happened to be in Blooming Prairie and we are super grateful for the experience because we learned so much,” she said. “We knew we wanted to have a location in Austin sooner or later. We’ve always been looking and this just fell on us. It’s that perfect walk through again for us. A meant-to-be kind of situation.”
Part of what made the location attractive to Tietje is that it came with much of what they were looking for in terms of the business’s operation.
It already comes with existing infrastructure a coffee shop would need and took away the need to start from scratch again.
The location was also a big seller for Tietje.
“The location is great because we are really close to Walmart. We are right by a couple major restaurants here in town,” she said. “The northwest side is a wonderful location to have something.”
The menu of the location is largely going to be similar with an assortment of hot-toasted bagel sandwiches, specialty bagels and specialty cream cheeses. Also on hand will be the 100% fruit smoothies, which Tietje sees as possibly expanding later on down the line.
That’s not to mention a complete organic coffee bar exemplifying the health turn Boujee is offering.
“A lot of our stuff has a health conscious background to what we do,” Tietje said. “A lot of our salads start with lettuce that is organic or grown locally. We build upon those ideas so the concept is just premium products and alternate choices if that’s what you care about.”
While Tietje said people can certainly come and sit down to enjoy a bite to eat or a cup of coffee, she said this location will look at more of a out-the-door operations focus with the possibility of adding delivery at a later date if it’s warranted.
“Obviously we want people to come in and sit, but we do have more limited seating,” Tietje said. “About six tables here. You can definitely come in and hang out with us. We would love that, but it’s also an easy spot to take things to go.”
Overall, Tietje said she is excited for the possibilities of what the new location will offer, including exposure to a larger demographic.
“We’re super excited. It’s a great location,” she said. “There’s a great big possibility of having such a diverse population and a larger population, of course. It’s just a perfect fit for us.”
“Just some great products we offer that we can’t find in the community that we want to bring,” she added.
