(COLORADO SPRINGS) -- The team behind The Chuckwagon 719 is expanding with two new restaurant concepts, the first of which will open on Tuesday, Jan. 7 at 11 a.m. in the former Mason Jar building at 30th and Colorado. The new ventures--Hammond’s Pastrami & Smoked Delicatessen and The Seared Steer Steakhouse--will offer a variety of slow-smoked meats, freshly made sandwiches, and high-quality steaks, all crafted with a focus on flavor and quality ingredients. At Hammond’s Pastrami & Smoked Delicatessen, all meats will be slow-smoked over live fire, ensuring a rich, smoky flavor. Customers can expect sandwiches made to order, with pastrami, smoked roast beef, and smoked turkey as some of the deli's signature offerings. The deli will also feature a smoked charcuterie board, and all mayos and aiolis will be made in-house using a beef tallow base for enhanced flavor. Opening in early 2025, The Seared Steer Steakhouse will offer a unique twist on the traditional steakhouse. All steaks and proteins will be slow-smoked and then seared over a real wood-fired grill. The menu will feature a variety of options, including steaks, smoked prime rib, pork porterhouse, and chicken fried bison steak. The Chuckwagon team is excited to share their new dining concepts with the community.
