Customers lined up from the counter to the door at 9 a.m. Thursday, Jan. 2 for the soft opening of Einstein Bros. Bagels in Highland Crossings. The shop is at 27993 Greenspot Road, Suite No. 2, on the east side of the center, near Esporta Fitness and across the parking lot from In-N-Out Burger. The shop sells a wide variety of bagels starting around $1.99 each. A box with a half dozen bagels goes for around $11.99-$18.29. Choices range from plain to everything with a mix of toppings. Sweet bagels include chocolate chip and apple cinnamon. Special bagels include Cheesy Hash Brown and Spinach Florentine. Einstein also sells baked goods such as muffins and serves breakfast and lunch sandwiches for takeout in the $7-$10 range. The menu includes brewed coffee and specialty beverages. The shop will be open 9 a.m.-2 p.m. on Friday,  Jan. 3. After that, regular hours will be 6 a.m.-3 p.m. Monday through Saturday and 7 a.m.-3 p.m. Sunday. A new, 22-acre shopping center is under construction across Greenspot Road. It is called Greenspot Crossings and will be anchored by Stater Bros. Eateries will include Chipotle Mexican Grill and Starbucks.
