WICHITA, Kan. (KSNW) — A discovery of a piece of Wichita history, made by a Missouri couple.  KSN's Derek Lytle sat down with them about the Valentine's diner they bought, that had been hidden for nearly 50 years, in Winfield.  The diner is believed to have opened in Wichita in 1947, then moved to Winfield. A building built around the structure hid it, until the city moved to tear it down last year.  The demolition revealed the diner, hidden for decades. Chris Simmons said his wife and he jumped at the opportunity to buy the dinner.  Hoping to restore the history behind the dining experience.  "They were demolishing a building, and as he drove past it, he realized that there was a diner inside the front portion of this building that had been covered up for the last 50 years," said Chris Simmons.  The diner made the move to Winfield in 1968, opening its doors as a restaurant, before the owner's son decided to expand the space, into a disco hall, hiding the once-flourishing grill, behind the walls of time.  Simmons and his wife purchased the diner in the summer of 2023. They said they want to restore it to its peak, but are having a hard time learning about its glory days in Wichita.  "Unfortunately, over time, those records of what serial number went to what property have been long gone," said Chris Simmons.  It is believed to have once sat near what is now McConnell Air Force Base, in the 1940s. Simmons said, once they know the full scale of its history, it will help them add it to their town's historical registry.  Renovations would then take two years, before it is ready to open in Pleasant Hill, Missouri, the Simmons' hometown.  However, they might need some help to run the business.  "A little bit like that Field of Dreams, once the word gets out, once people find out, people who work in the restaurant service, that love that kind of stuff, hopefully, we'll find the right employee to run it and to help us through that operational process," said Chris Simmons.  It would be the second piece of history they have added to their downtown area.  The couple bringing the historic 5 and 10 building, in town, back to how it used to look. Chris' wife, Kristy Simmons, said they hope others come to appreciate the walk-through time.  "Not only to put the diner there after it's restored, but to just bring an experience to people, to make it look and feel and sound, just like the 1940s, where it's not just a place to go to get a burger, but it can be a whole experience for someone," said Kristy Simmons.  If you recognize the diner, or know more about its history, in Wichita, Chris and Kristy hope to hear from you.  You can find their restoration website here.
