ICASI, Hungry Bee Catery offering meals and sides for holidays

Help is at hand for those holiday meals from Loretta Paganini’s International Culinary Arts & Sciences Institute and Hungry Bee Catery.
Full meals and components to add to your own feasts can be ordered in advance from both businesses and picked up the day before for reheating.
Christmas dinner is the forte for the professional chefs at ICASI, in Chester Township, while options from Hungry Bee, in Bainbridge Township, also include a help-yourself breakfast to enjoy while opening gifts on Christmas morning, a romantic New Year’s Eve meal for two and a lucky New Year’s Day feast of pork and cabbage
The deadline to order Christmas dinner from ICASI is 11 a.m. Dec. 19. Pickup is between 11 a.m. and noon on Dec. 24 at the institution, 8700 Mayfield Road.
Christmas dinners are portioned for four ($195) or eight ($295) and include a choice between Maple Glazed Ham or Roasted Turkey, with Gravy, Chestnut Dressing, Cranberry Fruit Chutney, Green Bean Almondine, Mashed Potatoes, a Yule Log cake dessert and assorted cookies. Also available is a 10-by-13-inch pan of Homemade Bolognese Lasagna or Mushroom Vegetarian Lasagna for $95 or a quart of Wedding Soup at $20.

Hungry Bee Catery, just outside Chagrin Falls, has traditional Christmas dinner among its offerings but goes well beyond that for those who want to bring a dish to share or for dishes to fill in what’s already been planned. The deadline to order is 10 a.m. Dec.18.

Treating yourself sounds perfect for Christmas morning with a half-pan savory egg bake (serves 10) of eggs, sausage, potato, cheddar and fresh herbs for $40 or a half dozen oversize cinnamon rolls at $24. A sausage-biscuits-and-gravy casserole (serves 10) at $40 may also hit the spot as presents are opened and admired.
If you’re a guest at someone else’s home for dinner, offer to bring appetizers, choosing among a dozen crab cakes with charred tomato creme fraiche or a dozen mini beef Wellingtons, both priced at $30. Or perhaps a jumbo 2-pound shrimp cocktail ($60) will capture everyone’s attention.

A quart of lobster bisque will cost $18, while a quart of Italian wedding soup will be $10.
Choices for a Christmas dinner for four: short rib with herbaceous demiglace ($68); beef tenderloin with horseradish creme fraiche ($198); braised lamb shanks with a red wine rosemary demiglace ($74)l or pan-seared salmon with crab compound butter ($50).
Having friends over for New Year’s Eve? Once you order champagne and good things to drink, consider Hungry Bee’s gorgeous Cheese & Charcuterie Duet Display, which looks almost too good to eat. It’s $120 and easily serves 10.
A romantic New Year’s Eve for two is ideal when you set the stage with a $200 Date Night meal that begins with mushroom and gruyere bisque with truffle oil and segues into a roasted pear and spinach salad with candied pecans, pomegranate seeds, fresh herbs, pickled red onions, goat cheese and a balsamic vinaigrette. Move on to a giant ribeye steak for two napped with a horseradish creme fraiche and shelled king crab with clarified butter. Cap it off with twice-baked potato and steamed asparagus followed by chocolate cake with fresh berries.
Many folks believe a New Year’s Day pork dinner will bring luck for the rest of the year. A $60 meal of pork, cabbage and dumplings that serves four fits the bill from Hungry Bee.
The pick-up for New Year’s foods is from 10 a.m. to noon on Dec. 31, but orders must be in for both Christmas and New Year’s by 10 a.m. Dec. 18.
