Ingredients
1 bunch fresh spinach and mustard leaves
2 medium onions, chopped
2 cloves garlic, minced
1 medium ginger, grated
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala
1/2 tsp turmeric
1/2 tsp red chili powder (optional)
Salt, to taste
2 tbsp vegetable oil or olive oil
Instructions
1. Blanch spinach and mustard leaves in boiling water, then puree.2. Heat oil, add cumin seeds, let sizzle.3. Add onions, cook until translucent.4. Add garlic, ginger, and cook for 1 minute.5. Mix in spices (coriander, garam masala, turmeric, chili powder).6. Add spinach puree, salt, and stir.7. Reduce heat, simmer for 5-7 minutes.
