ASHWAUBENON, WI (WFRV) - A Wausau-based distillery opened a new tasting room along Holmgren Way. It is a homecoming for the owner of Timekeeper Distillery, Kimm Weber. "With the recent law modifications we're able to open a second tasting room," she told Local 5 News. "And we thought what about a place where I called home? All my youth and to college. So it's great to be home." They're open on Friday and Saturday evenings and Game Day Sundays starting at 11 a.m. They're located in the Revolution Market and in adherence with local ordinances can only open when Souper Day shuts down for the day. Although owner Julie Baranek provides a separate menu through the distillery to accompany the craft cocktails. "So we use egg whites to make traditional whiskey sours." Weber explained "And we manufacture our own bitters to make our own old-fashioned." Master Distiller and co-owner Dan Weber said all their grains are grown organically in Marathon County. They also have a line of seltzers available, like the spirits, for tasting and purchase to take home. "Distilleries are up and coming and only about 30 are in the state," Dan noted. "Hopefully with the NFL draft coming it will help folks get to know about that sector of the Wisconsin craft market."
