"We have people with a lot of Latin heritage, like Hispanic heritage from Mexico and influence from Ecuador as well, we also have people from Peru. So, I take one little part of each country to put and represent on our plates with classic techniques." Chef Baca takes pride in using authentic ingredients that resonate with guests. From sweet potato gnocchi to Ecuadorian chocolate cake, he and his team are redefining what fine dining means. "I always say it's not me, I'm just the guy behind the team," Chef Baca said. At the Cliff House, it's all about blending history with fresh ideas, and for those looking for unique dining experiences, the historic hotel hosts themed dinners. "We are doing a tequila dinner in January, where we will be pairing a bunch of probably Ecuadorian items with some different cocktails and some different tequilas," said Bradford Miller, Food and Beverage Director at the Cliff House.
