Oathbreaker Pie | Leo Brill Oathbreaker Pie is set to open on November 1 in the Hinterland Pod Leo Brill, the chef and owner behind Alberta’s highly acclaimed Dungeons and Dragons-themed pizza cart Paladin Pie, is opening a new cart called Oathbreaker Pie in the Hinterland Pod on SE 50th Avenue. The new cart is set to open on Friday, November 1. The name continues the Dungeons and Dragons-theme; an oathbreaker is a story path players can choose in the roleplaying game where they break an oath (in this case, the oath is wood-fired pizza). While Brill will be the chef at both carts, Oathbreaker’s pizza offerings will differ from Paladin’s. The new cart will have a gas oven, in contrast to Paladin’s wood-fired setup. Oathbreaker will serve crispy-bottomed New York-style slices sturdy enough to support themselves under the weight of toppings, while Paladin is known for its chewy Neapolitan pies. Brill had to rework the recipe he’s been using at Paladin for the new style, but will still use a slow-fermented sourdough. In addition to the pizzas, Oathbreaker will also serve other classic New York pizzeria dishes like garlic knots, Stromboli, and a Caesar salad. Favorites from Paladin like the buffalo chicken pizza will also make appearances on the menu. Brill founded Paladin Pie as a pop-up during the pandemic after being laid off from Portland pizzeria Oven & Shaker. He developed the sourdough formula for his pizzas at home, landing on a two-day fermentation at about 70% hydration. In the pop-up stage of Paladin Pie, Brill would raise money for mutual aid funds at each event. With such tight margins, fundraising has become less viable as a permanent business, but Brill still hopes to get back to that mission when it becomes financially feasible. For now, his focus is on providing a living wage and healthcare to his staff, while feeding guests when they’re unable to pay and donating pies whenever possible. Leo Brill Stromboli.
