EL PASO, Texas (KTSM) – I’ve been watching the neighbor’s pomegranate tree grow, watching the fruit turn from green to a beautiful shade of burgundy. Their tree produces hundreds of delicious pomegranates, and they don’t mind people going into their front yard to pick a few. I’ve asked for permission to gather a few. This is a batch we picked last night. We’ll squeeze them for juice that’s rich in antioxidants, vitamin C, and vitamin K. The seeds are edible and a rich source of dietary fiber! Some consider pomegranates a superfood! Image: Estela Casas The pomegranate is also rich in symbolism. In Egypt, it symbolizes prosperity and ambition. In the Hebrew Bible, it was the forbidden fruit in the Garden of Eden. In India, it symbolizes fertility. Right next to the bowl of pomegranates is a statue of Saint Francis of Assisi. He’s the patron saint of animals, birds, and the environment. You may notice the silver Milagros on his cloak and a red heart Milagro. They each represent love, healing, and gratitude.
