The 90-day dry-aged Kansas City strip joins chef Bill Williamson’s new menu at Lyle DC. | Lyle DC Chef Bill Williamson gets nostalgic as he takes over the same Dupont space he helped build almost a decade ago. Renowned D.C. chef Bill Williamson is excited to “go full circle” as he takes over the kitchen at Lyle DC, a luxury hotel in Dupont Circle that used to be the Kimpton Carlyle hotel and a neighborhood restaurant called The Riggsby (1731 New Hampshire Avenue NW). Williamson opened The Riggsby back in 2015 and after leading a few spots around town, like Birch & Barley and BLT Prime, he says “it’s nice coming back, and it’s good to kind of see familiar faces from the neighborhood in the dining room that remember me.” Lyle DC Chef Williamson says the Lyle space is “nostalgic” and he can still feel “the blood, sweat, and tears” of starting The Riggsby. Williamson unleashes new lunch and dinner menus to the contemporary American restaurant and bar on October 22, subtly switching in some premium cuts of meat that he sold at his short-term butcher shop, The Butcher’s Market, during the pandemic. “There’s one cut specifically that I sold at the butcher shop that’s on our menu now. Our 90-day dry-aged Kansas City strip,” Williamson says. “It’s one of my favorite cuts, first of all, and second of all, it’s got a lot of great flavor to it, you know, brown butter notes and kind of this little funk to it that the dry age process brings out.” The 14-ounce bone-in New York strip ($44) is served with shishito peppers and horseradish crema to compliment the rich steak. Dry-aged steak clippings also make their way into Williamson’s take on the classic burger, with “a 50/50 blend of dry-aged meat to fresh prime” in the flavorful patty. Adding some fresh new elements to existing dishes, like a braised and fried pork belly served with sushi rice, fennel, apple, and chicharrones, Williamson hopes to upgrade the menu but still keep it approachable for the same longtime customers. “It’s something that I think this neighborhood can relate to,” Williamson says. “They can come in, you know, Monday, Wednesday, Friday, or whatever, to have something different each time.” Nearly 100-year-old butcher shop sued by animal protection groups Harvey’s Market, a Dupont Market butcher shop that opened in 1931, is being sued by animal protection groups Animal Outlook and Legal Impact for Chickens for misleading marketing practices, after advertising foie gras as “humanely raised stock,” “all-natural,” and “free range.” The lawsuit filed on October 15 said that foie gras actually comes from ducks that are force fed and kept indoors to fatten up their livers, mentioning how the two largest U.S. foie gras producers in New York’s Hudson Valley force feed ducks they then slaughter. The animals rights group is using consumer protection laws to push Harvey’s market to take down the signs.
