STATESBORO, Ga. (WSAV) - One of the Georgia Department of Public Health's (DPH) most vital functions is Environmental Health, and at the core of that is Food Service Inspections.  The DPH's Food Service Inspections can prevent contaminations such as a sick food worker spreading germs when preparing food if they do not wash their hands carefully. It can also prevent raw fruits and vegetables from becoming contaminated if they are sliced using the same cutting board or knife used to cut raw meat or poultry. Food inspections in Georgia: How they're rated and ways to check Many establishments perform well on their Food Service Inspections as they offer high-quality food and drink items under sanitary conditions to minimize the potential for food-borne illnesses, while other establishments sometimes struggle. News 3 took a closer look at Food Inspection Reports in Bulloch County for September and found just one restaurant with a score below 80. The Wild Wing Cafe located at 52 Aspen Heights Dr. in Statesboro scored a 79 on their report. Violations noted included: Dishwasher not properly sanitizing dishes and only reaching a temperature of 113 F. Heavy build-up on the microwave ceiling and on the ice machine baffle.  Wings at hot holding were at a temperature of 129 F. According to the DPH, dishwashers must reach a final temperature of at least 180 F. After the inspection, the Wild Wing Cafe was required to use a three-compartment sink to clean the dishes and the dishwasher was required to be repaired within 72 hours from when the inspection occurred. The DPH also requires the proper holding temperature for hots foods to be at least 135 F. Although the Wild Wing Cafe scored between 81-95 on past food inspections, they've also had struggles with similar violations and scored a 76 on their Food Inspection Report in April. Those violations included: Buildup on their ice machine baffle Chicken nuggets hot holding below 135 F Dishwasher without proper sanitizer concentration or temperature Moldy growth on bell peppers in the walk-in cooler
