TOWN OF WINCHESTER, WINNEBAGO CO. WI (WFRV) - Animal sciences associate professor Jeff Sindelar was recently in Northeast Wisconsin to give a presentation to the Wisconsin Alumni Association of the Fox Valley at Cattails Supper Club in Winnebago County. Sindelar runs statewide educational programs about meat science, processing, and food safety for industry professionals, dieticians, consumers, and youth. The Dish on Wisconsin Supper Clubs: Kewaunee’s Wildflower Supper Club blossoms "In Wisconsin supper clubs are important," Sindelar told Local 5 News. "They're the fabric of the state of Wisconsin. Meat science is also part of the fabric. Similar to the dairy industry. Without meat. Without meat science, one could argue Wisconsin supper clubs are not Wisconsin supper clubs." Sindelar says supper clubs are best positioned to offer a wholesome, safe, and nutritious meat product. "Because suppers clubs are places that Wisconsinites trust. They expect to have a good experience. Beyond the casual old-fashioned or two and some small talk, it's about being able to sit down with your family and feeling confident that the food they're having with their family is safe. And meat is often the center plate item." Cattails Head Chef Jon Ramirez says they make sure every product out of the kitchen is cooked properly. "With steaks, for example, we make sure our temperatures are on point," Ramirez said. "If not, we will refire anything at any time. We always want to have everyone at the table sitting and eating at the same time. So those things are super important to us." He's worked in many different establishments and believes supper clubs remain the best experience for value. "You get to have time in the bar to sit and enjoy conversation and cocktails before you sit down to eat. It's more of a curated experience compared with a normal restaurant and placing a normal order."
