APPLETON, Wis. (WFRV) - A new culinary business in the Fox Valley strives to bring the restaurant experience to the home but also embarks on a goal of sustainability in the process. Vanessa Sabee and her husband, Ross, started Sabee Culinary Services in April 2023. After both grew up cooking, amassing a combined 30 to 35 years of experience, the pair decided it was time to make a switch. Sustainably Speaking: Door County Land Trust continues to preserve the landscape Instead of cooking food using supplies provided by their customers, they bring the ingredients to the customer's home and cook them fresh in their kitchen. They offer a four-course meal with a side of a mocktail, and each weekly menu is crafted with various factors in mind, including what's in season, dietary restrictions, and food allergies. In addition to the at-home meal business, Sabee Culinary Services also provides event catering, prepared meal service, and just recently launched a lunch menu. With cooking being one of her passions, it was also important for Sabee to value sustainability and use locally-grown food. "We try to use as much local produce and product as possible in our items," explains Sabee. "We source most of it through what's called the Slow Farmers Co-op. It's several area farms that offer their produce, proteins, chicken, pork, and beef to local food producers like us." Sabee goes on to say that sustainability in the culinary business is better than ever, with more businesses taking it into account. Using locally grown food, she notes, not only saves business owners time and money but is also beneficial for consumers. Sustainably Speaking: Importance of a sustainably managed forest "First and foremost, the less your food travels, the better it is for you," Sabee says. "It has much more nutrient-dense properties compared to something that travels thousands of miles and is grown somewhere else."
